Hi Guys;

Hope all had a Great weekend, here in the Land of Cheese it was Fantastic!!!!!!!!!! Did St. Louis ribs and Started to enjoy the Weather!!!!!!!!

I had to volunteer to cook next weekend and it was accepted :). The problem is I've never cooked 3-4 Racks of St. Louis Spare Ribs a the same time. I figure they will fit on my BPS but, with that much meat, what about the center/side temp differencees. Any suggestions?? I'm sure it can be done, just I've never done it!! So Help!!!!!!!!!!

get a pizza pan at the least as a deflector pan, set the temp to about 220 on the drums thermometer rotate based on color shouldnt be a problem...you can also consider trying a rib rack if space is an issue.

I have trouble fitting more than 3 strips of St. Louis ribs on one gate without a rib rack.

I don't have a problem with rotating, I just let them all go at the same time, but your mileage may vary. Like BP says, you can rotate based on color.

A MAK ribrack fits in perfectly and holds 8. Made out of heavy gauge stainless steel and comes out perfectly clean in the dishwasher. Will last a lifetime.

Thanks for all of the Great advice!!!!! Did the 3 Racks of ribs, without the Rack (One was ordered anyway), and they fit in the BPS with alittle room to spare. The Diffuser plate I got from Steve @ Barrel Smokers really kept the temps equally distributed !!!! Got lots of compliments and people going back for 2nd-3rd's.

I don't think I'll worry so much about cooking lots of meat on My BPS, The more I use it the more I LOve it!!!!!!!!! Thanks again for all of the advice!!!
