Little late on the post but here goes. Started with 3 Butterball breast about 6lbs each. Brined overnight in water,kosher salt,peppercorns,red onion,orange,lemon,apple cider vinegar,garlic,sage and thyme.
Used a 2 stage rub Bacon Jalepeno & Sweet Money then put on drum @ 325 for 2 hrs.
Let them cook to 175-180 IT.
Took one to Mom & Dads and two to the outlaws, I mean inlaws, and everybody loved them!
