Well did a test burn today for 5 hours just to work on temp control to get familiar with the smoker before i cook on it monday or tuesday. I used a $4 pizza pan on a rack at the raised charcoal basket position with a rack on it to position 1 bbq probe in the center and positioned another bbq probe at center of top rack (maverick et-732). Started with vents all the way open half basket charcoal and lit 12 coals.
over shot the temp waited to late to dial back
took me a little bit but i got it dialed in with only 3/4 of a vent hole on each side open and the top vent all the way open
this is the smoker doing its thing, once i got it dialed in it held steady between 225-235 for almost five hours before i shut it off, its very easy to control and it holds temps very good and it amazes me how close all three temps stayed through the whole test.Also i dont plan to use the bottom grate for food (just me and the wife) just a deflector plate but out of curiosity i wanted to see what the temps were throughout.
