Resting tri-tip

How long should I let the tri-tip roast? In foil or not?

The plan right now is to smoke at 275 to 110 flip, and finish to 140.

That's a good plan. You can also pull it at 130F, raise the basket, and open the vents to let the coals get nice and hot and do a reverse sear for 1 1/2 minutes per side. Say no to foil. Some do foil and treat this cut of meat like a brisket. IMHO that's ruining this cut of meat. It's best when cooked like a steak. Again, IMHO. :)

I cook mine from any were around 175-200, around an hour per side wrap with foil and put it back on the drum for another 30 mins and pull and let it sit for about 20 min.

Thanks for the input. I ended up resting for about 15 min unfoiled. Turned out pretty good. Tri-tip is my favorite thing to smoke so far.

I smoke them at 275 to 140 IT then pull and let rest for 15 mins uncovered. Meanwhile I open the bottom vents all the way and raise the coal basket to the top and put my small grate right over the coals. Takes only about 5-10 minutes for the coals to come to blazing temps. Then I throw the TT over rocket hot coals at point blank range for about 60 seconds a side to get some carmelization going. I use K Blue bag so if you're using lump you may want to adjust those times due to lump burning hotter. Then flip and 60 more seconds. Pull and loosely tent with foil for 20 mins then carve.
