A couple of months into have a BPS drum smoker and I gotta say it doesn't disappoint. Everything I've cooked has turned out great, occasionally almost perfect.
I'm planning on smoking a leg (~8-10 lbs) from a wild hog this weekend. It's currently frozen and I was wondering if y'all had any recommendations on how long to thaw it and whether or no I should brine it while i defrost it. If not, do yall recommend brining it at all?
