I'll be smoking a 15lb black angus brisket on friday while sitting at the lake drinking some beer and hopefully looking at some tiny bikinis :)
This will be my first brisket and first long cook on the BPS drum so i'll post pics and let you know how it turned out.

Well nothing fancy but I did some burgers this past weekend and used some BPS desert gold on them.

Well started wednesday taking out some pork shoulder from the freezer, rubbed it thuesday, started the drum yesterday (22:30) done today (15:00) using mesquite charcoal (not briqets) my own PP rub. Spray with a mix of aple juice and aple vinegar. Not plated yet. Fired it up a few minutes ago. Ribs going on soon. Pics later tonight. Well probably make a grilled zucchini, corn, onion, and pepper salad as a side.

My brisket turned out OK. It was a bit dry and the outside was kinda tough in spots.
On my offset it used to take my briskets about 15 -18 hours to finish, on the drum this one was finished in 10 hours...and i wasn't paying close attention to it so it got pretty overcooked. Next time i'll pay closer attention and add a water pan.

One thing about a EDS is you can do long slow cooks, or hot fast cooks, in case you over sleep. (Saturday morning) We did a 14lbs
packer brisket in 3 1/2 hours. Tender and juicy, I may never spend 7-10 hours cooking a brisket again.
