Haven't posted in awhile. Thought I would share what I did this last weekend. Had a leg of lamb in the freezer and decided to throw it on the drum.
It's a bone in leg. Cut some slits in it. Dried it off and covered it with some oil. Salt and peppered it then made a garlic/Rosemary/thyme rub. Once rubbed down I covered it and threw it back in the fridge for about three hours. An hour before I wanted to start cooking I pulled it out and started up the smoker. I used chunks of cherry wood. Had it up too 275 for about 2.5 hours. Every so often I would open it up and baste it to keep it moist and check temp. Once it hit 140 I pulled it and let it rest.
Turned out awesome! Family cleaned it up.
