First time drummer

Hi guys,
I'm Mike from Québec, Canada and I'll be done building my first UDS tonight after work.
So I'm kinda new at this all but have done some peewee smoking on my BBQ.
What would guys suggest as a first trial recipe ?
I will do a dry run, meaning putting coal in the basket, and playing around with the air intakes, trying to control temperature, etc.
So ? What will it be ?

Chicken. Why? IMHO it's cheap, and if you ruin it no big money down the drain. It will help you learn your drum and how temperature works. You can try all sorts of woods and rubs. Spatchcocking is what i like to do. Once you figure it out move to more expensive cuts.

Chicken and/or tritip! Your drum is a chicken/tritip cooking machine! Sausages are an easy first cook.

chicken or fatty for your first run. instead of whole chicken, try thighs. legs or quarters first. For your first long smoke, go with a pork butt. Another very forgiving piece of meat. Cooking a butt will give you great experience on fire & temp control & how your drum reacts to changes.
