First smoke

Now that the drum is all done its time to break her in. Going to start with a big ole pork but for Sunday dinner.

This was the smallest one that my butcher had on Friday.

Got the but all trimmed and rubbed.

Going to let it rest for a bit and Ill throw it on around 2-3 am.

It went pretty well. It took me a while to get the temp to level out and stay where I wanted it. But other than a few adjustments it cruised along at about 230 for 13 hours. I made it through the stall and got it up to 196 and rested it in a cooler for an hour.

At the end of the day it tasted amazing. That's all that matters really.

I am super excited to try out some other stuff on the drum.

I think that some of the biggest temp issues for low temp cooks with initial cooks is overlighting the cooker and then "oversteering" it....make small changes and let them happen...
