First Cook At Camper With SS EDS

Finally got the truck fixed, so the SS EDS is at the camper. Doing a practice cook to prep for a small contest in a August.

Warming the pecan chunks prior to rolling smoke.

These are "enhanced" back ribs, seasoned with BPS Jallelujah, Sweet Money, and Happy Endings.

Funny you should ask...the rack from the small butcher shop got done in just over three hours @212 degrees.
