Cooked our first brisket on our drum. Flat cut, 250 for 2 hours, wrapped at 160, increased temp to 275 came up really fast, internal temp 200 at 4 1/2 hours total cook time. Flavor was spot on, but was a little dry.
Thanks for the tip, getting to know a new cooker is always a little trial and error, especially with brisket. That would explain the fast cooking time. Next time we'll try to dial it in at 200 or try our hand at a Hot & Fast.
