Lid Sweating and Dripping....

I made a drum with some of BPS parts but not the vent. I'm having a problem with the lid sweating and dripping on the meat. anybody else having this problem, any suggestions....

No, I have a SS Drum made into an Engineered Drum Smoker using Big Poppa's Kit. I have not had a problem with condensate dripping from the lid on my meat. Typically, I cook between 225 and 250 F.

You have a nice looking drum.

Just a thought here, the air flow isn't much when you're up to temp. and I'm sure all our drums are pretty similar. I wonder if the length of pipe you have attached to the barrel bung is cool enough at the upper end for any moisture coming out of your food to condense on the inside of the pipe and run back down into the smoker. I'm not sure what the reason for the long pipe is, and do you have a damper on the top? All my cooking in my barrel is with the top vent wide open. The air flow is regulated by the bottom vents. Try doing a cook with the pipe removed to see if that corrects the problem. I can't think of what else it might be.

Thanks, I'm now wondering if the exhaust is large enough. The pipe is 2" in diameter, the daisy wheel that BPS sells has eight 1" dia. holes which has twice the area than the 2" exhaust. So, is the heat and smoke not exhausting fast enough!

I changed the daisy wheel on our BPS drum to a round Aluminum 1/2thick with 1/2 holes with no issues. So it has the same exhaust as yours. Try removing the pipe. Love the old school guru

Because I changed our daisy wheel to half inch holes the area would match your 2 inch and we have no issues with sweating. the length of your pipe seems to be the only difference, I would try a cook with the pipe off and see what happens. Is the guru the only air getting into the drum? both our drums work better when there is a lower vent open and the guru helping to keep the temps. I can post some photos after work if it will help.

I have a BP EDS stock and a UDS I built. On the one I built, I use the 2" bung with no pipe and I never have issues with the lid and dripping on my food. I had pondered a pipe on it but if it aint broke, I aint a fixin' it ;) On the other hand, on all the cooks I have done on my EDS, I have never had that issue either and it is using the default Big Poppa daisy wheel.

I hope you get it figured out. Nothing like seeing nice black spots all over a beautiful rack of ribs.

I have a stock BPS drum kit and I have had moisture in it during a cook. It is when I have used a stainless steel water bowl sitting on top of a pizza pan I use as a diffuser. I haven noticed any drip marks on my food, but I am wondering if I just didn't notice. I will check it out tomorrow when I celebrate my birthday. I plan on smoking a brisket and a rack of spares while I do several rounds of functional testing of my BPS bottle opener! 🍺🍺🍻🍻✨😜✨
