Brisket

Needed to do a little practice so i decide to smoke a Brisket on the drum also cooked at 275* really like this temp.

Sliced not bad at all select grade brisket moist and tender

Cooked the ten# brisket in five hours two hours rest.

I've not done a brisket or butt in my drums yet. Have been reluctant because of the potential greasy mess on the bottom. How did it work out for you with grease down below?

Just the birsket not to bad, at the wildomar comp i did a pork butt and brisket had to use an old mop to clean it up when i got home.

I always put a foil pan down when using my offset or my ECB. Not sure how you could use one with the BPS other than using a deep dish pan as a diffuser and lettin it collect most of the drippings and grease.

I love cooking at 275, it is a great temp Wes. Brisket looks great, nice smoke ring!

Scooter, it is a smoker, let it get a little, just a little, greasy :)

I haven't made brisket yet, but I use a pizza pan under the charcoal bin, and a smaker pizza pan wich I have drilled holes in, some stops there and the rest stops in the ash pan. I'll let you know scooter :)
