This was my first cook on the new BPS Stainless UDS..
For the stuffing I used my favorites...
cold smoked back bacon, fried potatoes, minced scallions, minced jalapenos and a sprinkle of smoked moz cheese..
filled my fatty piston..and let the filling chill while rolling out the meat inside of a one gallon baggie.
wrapped in a bacon weave...
The UDS passed the fatty test with flying colors!
The wind was fairly strong.... I only needed one air intake open on the bottom. The UDS cruised along at 275F through the whole cook.
Worked like a well tuned guitar! lol
