An observation while cleaning my drum

So back in the day when I had my 75 gallon Big Drum Smoker, the charcoal basket did not come with a ash catcher. Basically you had a sandy sludgy mix that I would mix together and scoop out (messy) also the drum was so big, I had to lay it down on its side and lay in there to clean the bottom (double messy).

After the long SRF Brisket cook on Sunday, I went out yesterday and stirred my charcoal to get out any extra sandy dust and took out the basket assembly.

To my surprise there was no grease or ash on the bottom of the barrel ( love that ash catcher ), but there was a considerable amount of smokey black water on the bottom. Some paper towels dragged around the bottom took care of that........

This must have come from the considerable moisture that upright drum smoking provides during the cook.

I just don't know if I can ever smoke anything in my other pits......not with that SS beauty sitting there.:cool::cool:
