At first i was reading around the forums looking to buy a rec tec pellet smoker ( set it and forget it), then saw a guy selling pellet rigs for 399 for UDS, then ran into this forum on google and now thinking about just building a UDS, so like i first said Ive seen a guy selling a pellet rig for a UDS just wondering if anyone has done this.
Have no idea what Im going to get or build now! Have a cheap moded off set now, lot a trouble maintaaing a cook.

Flat Top, there is something about the way a charcoal drum cooks that sets it apart from every other cooker out there. The meat is about 2+ feet above the coals and is not direct cooking but I refer to it as semi direct cooking. You can put a deflector in between the coal basket and the upper grate for indirect cooking. The charcoal basket can be raised to where you're now direct grilling.
The crust on meats and skin on birds coming off a drum cooker like the BPS EDS is the best tasting you will ever find. I own a pellet cooker and love it for its simplicity of operation but I have to tell you, if I had to choose a single cooker to have with me on a desert island (and lets just say for the sake of argument that there was electricity on that island), I'd still choose my BPS EDS!

What you should is start with a drum and play with it....experiment with different charcaol different additional smoking wood and then see if you are still left wanting more.

I don't have a problem maintaining temps on the EDS, Sure I have to adjust the vents a bit, but once it is rolling it works very differently than what you have been using. I started out with a similar setup. Example, my drum ran last weekend from 6pm friday night until 1pm Saturday afternoon at 250. I never had to add charcoal or wood.
