I am building BPS drum smoker so I can smoke all the meat for my daughter's wedding this coming Father's Day. We want to have pulled pork and beef brisket sliders. The real caterer is taking care of serving and sides. I am planning on cooking ahead of time, then vacuum sealing and freezing the meat. The caterer is going to reheat and serve.
Does anyone know how much meat to buy for approx 80 people? I am planning on 1/3 lb per person, but I know my meats weigh differently after cooking. So how much meat can I expect to net after cooking? If anyone has an idea of how to estimate this, I would greatly appreciate the help.
