Confession of a lazy summer drum smoker

For years I have cooked with the drum. I commissioned the kit that most are cooking with. I have cooked with the basket in the bottom and diligently watched the temp. I have cooked with the guru and relaxed. I have cooked two and three stage cooks...even gently smoking thick steaks with the basket low and then raising the basket, letting the coals roar while the meat sat resting and then seared. I have cooken thin steaks and fish with the basket high and the lid off.....

One day early this summer I was in a hurry. I had charcoal left in the drum, had the basket high and the guru adapter in but no guru. No temp control. I fanned the steaks around the perimeter and cooked for about 5 minutes a side....then opened the drum let the coals go and seared.....they came out perfectly.

But here is the confession. Since then I have cooked every meal this summer this way and had great results.

Moral to the story. The drum is a machine. It cooks. I does its thing.

You can have a very involved cook and have great results or you can get lazy and have great cooks.
