Got some great prime Flat Iron...just a wonderful cut and at 10 bucks a pound and prime I think is a great deal for the quality and tenderness.

Got a few coals going and the drum at 250 Seasoned the flat iron with Big Poppa's American Royal winning Money Rub

ten minutes a side the pull the meat and leave the cooker uncovered until the coals get going like the freight train and sear for a minute a side

Is that Strube? The only flatiron I can find consistantly is the premarinated from TJ's. Butchers in NorCal have not caught on to the flatiron yet. It comes from the shoulder of the steer, yes?
You sure do eat good BP! I feel sorry for the restauranteurs in your area! At least the steak houses for sure. lol

Scooter, you are right, it is from the chuck, the shoulder.

NO with that high of heat I usually never plan on more than a 5-10 deegree rise as I want the char but want the bumper to bumper more.
