This is gonna be good. True, there is not much meat but what meat is there is beefy goodness. I usually foil my beef ribs towards the end to ensure tenderness..............

have you considered going with a Stainless drum?
Considering the head count started at 50 and kept growing.........Always good to cook a bit more than needed. Keep some gallon size freezer bags handy and bag up any leftovers........

I ordered by ss drum from Bubbas Barrels and my lid does not sit true in certain positions. I just press down on the lip of the lid and I have no smoke leakage and no problems during the cooks.
That is one of the nicest marbled tri-tips I have ever seen........and being out in Southern Cali...I have seen a bunch of em.

Mine smokes just like that with either Royal Oak Briqs or Kingsford.........haven't tried lump in my drum yet......

I am a hair over 5'10 and I can't touch the bottom of my drum on the dolly. I got a little gardening hoe at the 99 cent store and I just swirl round paper towels with it and so far so good.....
I got a drum dolly, I so wish I did this instead.......welded or bolted on??
So back in the day when I had my 75 gallon Big Drum Smoker, the charcoal basket did not come with a ash catcher. Basically you had a sandy sludgy mix that I would mix together and scoop out (messy)...
I did notice that my temps ran higher on my first couple of cooks but now they have ran lower on the same settings. I attribute that to the seasoning building up on the inside of the drum.
