Sweet Money Maple Rack of Pork with Spicy Mak Smoked Brussels Sprouts

Here is a a dish I made for the comp in Vegas (GC Baby, viva las vegas)

Preheat your smoker to 275
Trim pork rack and coat with good maple syrup

WHile this is cooking trim and quarter Brussels Sprouts...season with a drizzle of apple cider vinegar, olive oil, and a splash of apple juice coat with Simply Marvelous spicy apple

and roast until internal temp is 138 jack temp up to 400
Rest in a warm room...
AFter 15 min toss and add a couple slices butter and a dash of maple syrup COok for 5 or ten
slice plate and serve
