Since it was a special occasion I fired up all my smokers:

Start your engines:

The night before I prepped and seasoned 4 racks of Smithfield Prime Baby Back Ribs:

Off to the smoker they go:

On the baby drum I threw in some stuffed peppers (cheese and shrimp used for stuffing)

On the medium drum I threw in some drum sticks seasoned with Little Louie's Rub from Big Poppa Smokers (bigpoppasmokers.com) and some potatoes wraped in foil and finished with Jallelujah Jalapeno also from BPS

Drum Trio! Love chicken of the drum. Noticed you had two racks in the SS Drum. Do you find one level cooks at a different speed?

Hi Jim! It was nice seeing you at the raffle! I usually put a water pan on that rack but since I wanted the food done faster I decided to add 2 more racks, the lower racks did get more heat so what I did was rotate them once in a while.
