I just joined and wanted to introduce myself. I am a chain smoker hoping to learn some good stuff here.

I did some experimenting with a deflector/pan to prevent the juices from dripping on the coals. I want to get a good idea of the different tastes I can get and which way will work best for certain foods. For example: I like chicken without the deflector allowing the juices to drip into the coals better that using a pan to catch the drippings.

Anyway, I look forward to all the good information here.
