A huge tip to all of you. You are serving a very expensive cut of meat and it usually involves a big crowd. DO NOT CARVE AND REST IN A PLATE. Presentation carve to get the most out of your roast and also to portion and temp control. You can give uncle Jake the 'kings cut' and Grandma the petite rare and your loser future son in law the end cut. WHen you carve it it sits and dries out while you wait for people to get in line. Also ALWAYS put your protein on the end of the food line If you put it first every bodies eyes are bigger than their stomach and you will run out and have a lot of doggie bags or half eaten in the trash
