1st Cook In The Books

After a few empty runs to figure this thing out, I had my first test cook in the Big Poppa UDS tonight. I can only say..........WOW!!. This thing is great! If you are reading this forum because you are on the fence about building one of these, just do it. It has been a lot of fun, and people love to talk about it. It works as advertised. Plain and simple. Great quality product, and even a buffoon like me could build it. Here are some pics from the first cook. I did chicken, because ribs and brisket are too expensive to mess up. Now my confidence is up a bit.

I used Kingsford BB,no diffuser (but I do have one), minion method, let it burn for an hour before putting the chicken on, a very small amount of cherry wood, homemade rub, no marinades or injections. Cooked about an hour at 350 to 375.

I sure hope my first cook goes half as well as yours did. I used a BDS for 4 years for all my grilling and smoking needs but all pits are different and I am sure there is a learning curve................

Going to pick up some spare ribs and a butt for the Kentucky Derby this weekend. If you build it, they will come. ;)

great job....I know I am biased but I love drum cooking

Heck Poppa, once you taste the flavor profile of the juices and spices provide when they drip on the burning charcoal, you can't help but be biased. Whether it is on a SS drum or a galvanized trash can from Wal-Mart (I have seen them being used for smoking :( scary) you just get hooked on the old time pit flavor :cool:
