After a few empty runs to figure this thing out, I had my first test cook in the Big Poppa UDS tonight. I can only say..........WOW!!. This thing is great! If you are reading this forum because you are on the fence about building one of these, just do it. It has been a lot of fun, and people love to talk about it. It works as advertised. Plain and simple. Great quality product, and even a buffoon like me could build it. Here are some pics from the first cook. I did chicken, because ribs and brisket are too expensive to mess up. Now my confidence is up a bit.
I used Kingsford BB,no diffuser (but I do have one), minion method, let it burn for an hour before putting the chicken on, a very small amount of cherry wood, homemade rub, no marinades or injections. Cooked about an hour at 350 to 375.
