Where's the beef?

We love Beef Flat Iron Steak. These were cooked whole and seamed out after they rested. Cook time 2.5 hours at 275 degrees. Pulled at 135 internal temp. Tender, juicy and great flavor. The briskets were a whole other story.

wow and artistic too! 2.5 hours at 275 and the it was only 135? wow I would have thought they were more like 160 it.
