    Christmas Pork Roast

    I put a Pork Roast from Costco on the drum. I had a little trouble when I left it for an hour to do to church (It was supervised, but only to make sure there was no fire not to monitor temperature). I dry brined it, then rubbed it with many herbs and spices.

    Wow that looks great!
    I've never seen the brown bag pie thing before. What does the bag do?

    "The brown paper bag helps cook the apples long enough without over baking and over browning the crust, plus they stay juicy.     To be honest... the pie wasn't that great. The smoke flavor got into the apple pie, and was a bit too much. I had wanted to put this on the gasser to avoid the smoke flavor but still have some fun of cooking it outside. But both of my tanks turned out to be empty. Live and learn. I'll give a try again some time.

    In the mean time, I did have some cranberry pie that I love making for he holidays.

    The rest of the food though was really good. I like the smoke flavor on the pork.
