Leg of Lamb

I decided to try out a co-workers recipe for leg of lamb for my wife and some of her friends. I bought a boneless one from Costco. Trimmed it up and spent too long pounding it thin.

Made a homemade pesto made of cilantro, toasted pine nuts and walnuts. Rolled it up and coated with a chili paste.

Here's the finished shot. I over cooked it but my wife's lady friends love it! I cooked it at 265F on the drum smoker with some red oak bark. After an hour I realized it was going to take too long to get to temp so I bumped it up to 350.

Looks good to me! You probably would have nailed the doneness if you didn't have to up it to 350.
