Stuffed Chops and Peach Cobbler

I make these too often, but they are one of my favorites. I give thick pork chops a 2 hour quick cure with tenderquick. Rinse and stuff them with jalapeno cornbread dressing. The cornbread is crumbled and I add chicken stock and melted butter. The cornbread already contains onions, whole corn and minced jalapenos so I just moisten it with the stock and butter.

into the BPS drum at 290F...

made a skillet of peach cobbler...
when the peaches were bubbly, I topped them with batter and sprinkled with cinnamon sugar.

I like the flavor the drum adds to the cobbler. :)

I forgot to post the recipe with my pics.

For the filling ..
I used 8 cups of sliced fresh peaches..
combined with
1/2 tsp of cinnamon
2 TBs cornstarch
1 1/2 tsp lemon juice
and 1 cup of sugar

When the filling is hot and bubbly I top with spoonfuls of batter...

I combined 2 cups of flour with
2 TBs sugar
3 tsp baking powder
1 tsp of salt
and 6 TBs of shortening
Mixed well then added
1 cup of milk

Then sprinkle with cinnamon sugar and bake until light brown and set.

I add minced onions, jalapenos and whole kernels of corn to my favorite cornbread recipe. If you would like the recipe I'd be happy to share. :)
