I did these and vac sealed em for lunches.
Buffalo style boneless thighs oak smoked on the drum. Double layer of coals on one side of the basket. Placed 5 lit coals on one edge then a foil pouch of oak pellets on top. I dusted these with head country and a sprinkle of sure shot sids gun powder.
I cooked these at 275 to start for about 20 minutes then at about 325ish until done. Once they got to a dark mahogany color I flipped em to try to crisp the skin. I mixed up some parkay and franks hot buffalo sauce then applied that.
Here they are just before coming off.
And done before sealing and freeze.
These are DELICOUS!! The skin was slightly rubbery but the flavor was spot on!
