Drum Smoker Cold Smoker Box - Beef Jerky

My second attempt at cold smoking using the drum smoker plus my cold smoker mod. Got some london broil on sale for $2.80 a lb, cut into thin slices and marinaded for a couple hours. Then I put it into the cold smoker with charcoal and some alder wood. I shortened up the smoke tubing so it would be a little warmer in the box. It was usually right around 120 deg.

Smoked for 3 hours, then put in the oven at 170 to finish for another 2-3 hours.

Does anyone know how long I would have to leave it in the cold smoker to fully cure/cook the meat? I know it will never get up to safe beef temperature like 130 or so, but does it cure after a certain amount of time?

I also threw in some sharp cheddar while the beef was marinading. :)

Inside the drum, I like a couple coals and then put some small chunks of alder on top. Every once in a while I would drop a few more coals down there to keep it going.
