I decided to try out meatballs on the drum smoker...I won't be smoking them on my pellet smoker any longer!
I like to use a tweaked mama maroni's recipe: half and half ground sirloin and pork with fresh diced garlic, italian parsley, basil, grated onion, italian bread crumbs, eggs, asiago and romano cheese.
I cooked them at 265 for about 45 minutes or so with red oak bark wrapped in foil and hole punched.
Into the home made pasta sauce where they simmered for about an hour stirring occasionally.
No final shots but it was served over thin linguini. Our guests loved the flavor and was a big hit!!!
