Ideas for leftover pulled pork?

For the fourth, I put two pork butts from Costco on the drum for my first attempt at pulled pork.

with a side of beans, slaw and cornbread. Here is a before of the beans.

I actually don't like beans (texture thing I don't like baked potatoes either, I know that is weird) but I tried them anyways, they tasted good, but I still could only do a few bites. My family really liked them though.

Pork was good, it was very moist.

After coming to temp and resting for about 2 hours in foil.

I forgot to take a picture after pulling.

I made all of this for about 8 adults and a few kids. So there is quite a bit of meat left.

What are some good recipes for the leftovers?

I ended up making nachos with the pork. I reheated the pork in a skillet, added some taco seasoning using recipe here (very highly rated recipe on the site, and I agree).

I put a layer of chips, then the cheese, then the pork.

In the broiler until the cheese melts (only a couple minutes max). Top it with lettuce and tomatos, serve with a margarita and enjoy.

the nacho's look great, next time try making pulled pork pizza and use bbq sauce in place of the pizza sauce. I've also made pulled pork egg rolls. They were a little labor intensive but well worth it in the end.
