Simple smoke at 250 I used one chuck of apple wood with hasty bake lump...I turned the beast over at 110 internal and pulled at 131

Wow. Absolutely awesome! That prime rib looks incredible. Thanks for starting this site. Between you and Cowgirl (and others) I've already learned a bunch. Gonna do Cowgirl's bacon wrapped corn tonight with chicken halves. Keep on dropping some knowledge, It's nourishment for backyard bellys everywhere.

the prime rib looks fantastic. did you cook it in the pan and rack or just on the drum grate?

absolutely never. capital never. Here is why...I am building a bark. Rub smoke juices....I dont want to burn them if you look at the edges of these it looks as if I have seared it but that is smoky goodness!
