Finally!! Time to Smoke!!

Finally getting a chance to smoke.. I have a pork butt in the fridge, glued with olive oil and dusted with a pepper, garlic powder, onion powder, season salt mix.... This is my go to on steaks, so we will see how it does on the butt!! Started the fire about 4:30 am... Meat went on about 5:30 am.... Other than some meat thermometer issues everything looks to be on track... Gonna have to make a run to the store to replace the temp meat thermometer that I bought to replace the screwy meat thermo.... Pulled, wrapped, toweled and in the cooler... Hows that go again?? 10hrs low and slow... Resting in the cooler for now, gonna give it a couple hours
