Rubbed the bird and put in fridge for 4 hrs.

On the drum @ 300-325 for 2 hrs.

Had never tried cherry wood, really liked the flavor of the smoke!

Skin on bird turned out much darker than i expected. It was by no means burnt, just dark. To much rub? Did not add sauce until just before pulling off drum.

Plated it up with some dirty rice and pinto beans.

Taste and tenderness was A+, appearance was B-, let me know what you think!

Where was sugar in the list of ingreds on the rub? When I go high temp in a drum and color is important, I make sure the rub I use is lower sugar or at least has raw sugar which has a higher burn point.
Also, did you measure your 325 at the side or in the middle. It can be 30-50F higher in the middle than on the side where the temp gauge is.

if you cooked it entirely skin side down you will also get that Let the bones work as an insulator too....for 75 percent of the cook make it bone side down. Also not all charcoal is created equal...I havent had great luck with the stubbs...that isnt related to your color just ash content, temp and burn time.

also what was you internal temp 2 hours at 325+ should be more than enough tmie take internal temps and find that perfect spot for you with color vs internal temp anything over 160 is legal!

Don't get me wrong guys, im not complaining at all! This was just my first cook and im still learning.
Im sure ill get better with time. Like i said taste and tenderness were awesome!

Also, not all wood smoke reacts the same either. I've found hickory and pecan and cherry darken meat faster than others. Apple seems to do it the lightest. If you smoked it the whole 2 hours with cherry that would be a big contributing factor as well.
