I love poultry on the drum! IMO the meat doesn't benefit from low and slow smoking so I cook these at a higher temperature. Usually 325F to 350F.
The game hens were slathered in butter and seasoned with Rooster Booster dry rub...
I sliced the potatoes, inserted bacon, drizzled with olive oil and sprinkled with coarse salt and cracked black pepper.
Smoked for about one hour, until the juices ran clear on the birds...
They are sooooo moist and tender, I love drum birds!
I need to make these more often. lol
