View Full Version : Bacon Dressed Meatloaf and Cheatin Onions

We had a hankerin' for meatloaf the last couple of days so I took advantage of a beautiful day and fired up the drum.
Got a couple of onions at the local farm and made up a couple of BP Cheatin' Onions with Yardbird on one and Little Louie's garlic pepper on the other.
For the loaf I mixed up 2lbs of 80/20 GB some ketchup, 2 eggs, brown sugar, bread crumbs, spicy honey mustard, and garlic pepper. Dressed it up with a bacon weave [getting better at the weave cowgirl], more Little Louie rub and put it on the drum. Took 3hrs to get to 160 then left it on some more to crisp up the bacon a little more. Ended up pulling it out at 175.
It was pretty good but the loaf broke up easily going to the plate. Other than that, real tasty.
The onions were off the hook...tender with a nice savory buttery kinda thing that went real good with the loaf.

Niiiiice! looks just fine to me.may want to add some more moisture to the meatloaf mix...little sourcream....etc
