Greek Pork Braid

I use pork tenderloin for this, cut two tenderloins into three strips each..

season with a mixture of....
Oregano
granulated onion
minced garlic
papkika
coarse salt
cummin
rosemary
peppercorns
coriander
celery salt
I used about one teaspoon of each.

braid and secure with picks...then drizzle with olive oil...

into the drum at 275F...
added twice baked potatoes..

brought the braids up to an internal temperature of 140F...

What a great setup. The custom grate is spectacular.

I think that I might just try the pork braids myself this weekend.

Thanks Tugnut! I like the braid method.. think it would be great with a wide variety of marinades or seasonings. The pork stays nice and moist and the seasonings really penetrate into the braid.
