Dove season is here so I've been making room in my freezer.
These are quail from last season. :)

I love rice on the smoker... used a wild rice blend, added minced scallions and chicken stock.

smoked until the stock was absorbed then removed from the drum and covered.

Seasoned the quail with Tatonka Dust and wrapped in bacon.

It was a simple meal but tasty at the time. :)

little bacon wrapped chickens. nice. i could see how you would need 2 of them. another great meal jeanie. :cool:

Good job, on the "mini chickens on a stick". We really like wild rice, I'll have to try it on the drum.
