I was finally able to steal a few hours to do some outdoor cooking this weekend.
Yesterday we made bacon wrapped stuffed chicken
It's very simple and pretty darn tasty too.
I just take 1/2 of a very large chicken breast (or turkey breast), butterfly it and then flatten any thick areas with a mallet.
Put some precooked stovetop stuffing (or whatever is your favorite) in the middle of the chicken and then roll it up.
I then sprinkle some rub on the breast.
From there, I wrap it in bacon and tie it up with butchers string.
Put it on the grates at med to med high heat, add some smoke and cook until the internal temp is about 170ish.
On most days, I hate chicken, but the bacon, smoke and stuffing seem to give it some flavor.
If anyone can tell me what I am doing wrong with the images, I would appreciate it.
