So that's what I cooked for dinner at the Mesquite Nevada Contest....
I smoked it at 250 to an internal of 130 no pics...
then did the sear from the lower position of the firebasket

about five minutes a side until an internal of 140....tri tip needs about 5-10 degrees more than a traditional steak

Served with MAK Smoked Savory Jalapeno Cheddar Bread Pudding (a crazy Idea had that worked!, salad and bacon wrapped corn (thanks again Jeanie!) and Tri Tip

Looks really good! I wish I could get tri-tip on my coast for a decent price. I need to special order it ;( and I second the bread pudding recipe thing..
