Smoked Duck ......

and Andouille Sausage Gumbo.
Smoking the duck was easy, making the gumbo was a labor of love. lol

I rubbed the duck (domestic duck) with butter, seasoned with S&P...

into the beautiful BPS UDS at 325F....
Saved the drippings and duck fat for the gumbo.

the duck tasted great, it was hard to save some for the gumbo!

roux.. 3/4 cup duck drippings and 3/4 cup flour...

I've made this before but this batch tasted extra special. I think it was the drum. lol

BP we need a Cowgirl cooking class!

i'd go. can i sleep in the back of my truck? i would love to have a jeanie cooking class. :) your smoke duck soup looks good. alot of flavors. w/ the rice too. ohhhhhh. 1st class meal all the way. your the best cook i know jeanie. :cool:

Another great cook Jeanie. Your presentations are always so picturesque! My BPS UDS is assembled and all it needs is the burn-in. Going to do some Alaskan salmon this weekend.

Wow Jeanie...this is an amazing cook! Labor of love indeed but boy I'm sure it makes it even better! Way to go
