Yesterday was a beautiful day out in the Coachella Valley, springtime is pretty much the best part of the 8 months of great weather we have out here in the home of BPS. Since Easter is a holiday that's much more fun with little kids, and BP and the rest of the family were out of town I decided to smoke up a tri tip for a quick Easter dinner for my girlfriend and roommate. Here's how it went:
I rubbed the tri tip with a base layer of Little Louie's, a second light coating of Money, and then sprinkled a bit of Cuckoo Racha for a little extra kick.
Set the pit for 225 until 110º, threw a grill grate in there and raised the temp to 300º and pulled at 131º, then rested for 6-7 minutes.
And finally, the plate shot. My old lady made scalloped potatoes and mac n' cheese for sides*, they were excellent, and I applied a little bit of EAT BBQ IPO to the meat.
