Jumpin in head first!

Finally finished my EDS and I think it looks great! Below is a picture of the finished product and inside (sorry, I didnt get a picture of it) are 2 pork butts that I experimented with by using 2 different rubs and marinades. Both turned out great even though one of them (oddly enough, the smaller of the two) took about an hour longer then the other.

Tomorrow, I will be jumping right in and attempting a brisket and some quarter legs.

Now for the questions:
I'd like the chicken to be a bit crispy so is 325 a good temp to cook the quarter legs at and how long should I cook them?
Also, I watched big poppas youtube video on cooking brisket and would like to know how long, at what temp, and was the coal basket at the lower brackets or the upper when cooking the burnt ends???

I cooked the brisket on a pellet cooker...do not raise the fire basket for the burnt ends.....any temp between 225 and 275 is good....on the drum I would cook at 225 to allow for the high temp in the center
