I smoked 2 stuffed pork loins today and damn did they turn out delicious.
one is stuffed with diced jalapenos and chedder cheese, rubbed down with head country seasoning, and wrapped in bacon.
the other is stuffed with a homemade apple pie filling my wife made, rubbed with some sweet and spicy dry rub, and wrapped in bacon.
cooked them at 225 until internal temp hit 110, flipped and continued cooking until internal temp was 150.
OMG they were amazing.
