I love all the different ways of cooking on the drum...Here is a different twist on reverse sear...You do the whole cook with the basket on the higher hooks.
Get the fire going...season your meat....place on the outer edges of the drum
These were Hanger Steaks that cook quickly.. cook covered on the edges for 5 minutes a side...
then ope the drum with the meat off and let the coals catch..It doesnt take long
Then sear for about a minute a side and rest and slice
